Potato White Bean Bacon Soup

Start saute...
Tbs butter
1 or 2 strip bacon, sliced
3 chopped carrots
4 potatoes, cubed
1 cup chopped celery
1 cup chopped mushrooms

Cover, cook until soft, stirring occasionally.

Add hearty pinch of Mix mix, one shake of adobo, and teaspoon paprika. Stir, then add one can white beans and cover everything with water. Simmer until cooked through. Mash slightly.

Gumbo!

Saute, covered...
4 cups chopped celery
2 cups chopped red & yellow pepper (with seeds)
1 chopped onion
Chopped garlic
Andouille sausage
Olive oil
2 tbs butter

When soft, add...
2 tbs paprika
Salt
Black pepper 

Then add...
4 cups chicken broth

Simmer for 20 minutes
Set aside until just before serving

Just before serving...
Add 4 cups chopped spinach
Bring to simmer 
Saute 1# shrimp in oil then add contents to gumbo

Serve with rice, bread etc

Strata

Basically an eggy stuffing, prepped the day or night before.

Mix
8 eggs
1 1/2 cups cheese
1 cup broth
2 tbs butter
1/2 cup oat milk, cream or milk

Saute
1-2 cups Vegetables
1-2 cups meat or sausage
Herbs as appropriate

Toss the sauteed ingredients with
6 cups bread pieces, stuffing mix, stale bread etc
Mix in wet ingredients and pour into baking pan. Cover and set in fridge overnight.

Uncover, top with cheese, bake at 350 for 40 minutes. Finish under broiler.

Sherpa Stew

This recipe came from a dish we enjoy at a local Nepali restaurant, Everest Sherpa. As we experimented with recipes, we settled on this version which we liked more than the one at the restaurant!

Ingredients
Carrots, potatoes, sweet potatoes, onion, celery, peppers and any other vegetable, chunked or cubed, about a cup or two of each.
Chopped garlic
Chopped fresh spinach 
Cubed meat of your choice if you are interested in meat. Lamb, chicken, sausage all work well, but meat is not critical.
Water, or if you prefer, chicken broth or other stock.
Turmeric, ground coriander, black pepper, ground cumin, ground mustard, sumac if you have it, oregano, and salt.
Olive oil and butter

Cook!
In a large pot, saute the garlic and meat in a tablespoon of oil and tablespoon of butter. Once it is starting to brown, add all the vegetables but the spinach. Cook for a few minutes, stirring frequently. 
Add another tablespoon of oil and a heaping teaspoon of all the spices, plus more turmeric to taste, we use about a tablespoon. Stir for a few minutes, allowing the spices to coat the vegetables and start to release their mystical powers. Add enough water, or stock, or water and stock to submerge the ingredients. Stir well, scraping the bottom.
Once the stew comes to a slow boil, add a couple handfuls of spinach. Stir and turn heat down to a simmer. Cook until vegetables are soft and the broth has a nice light flavor.

Options
As is typical with soups and stews, the second day will be better than the first. Add additional salt or fats, like schmaltz, to pump up the flavor on the first day.
For a little extra zest, Thai red curry paste is a nice addition, as is red pepper or a sprinkling of a traditional Curry powder mix.
Whipping in an egg or two as it is cooking is tasty.
Serve with pasta or dumplings. A quick rolled pasta is nice, especially if cut into thick squares

Shrimp and Grits

This is a very flexible recipe, and the main variable is the butter, which should be decreased with fewer servings and increased to 1/2 stick for 5 or 6 people.

Defrost, p&d shrimp, set aside
Start water (or stock) for grits, add bouillon to water, add 1/4 to 1/2 stick butter and bring to a boil. Whisk grits as they cook. Set aside
In frying pan, add chopped onion and garlic to 1/4 or 1/2 stick butter. Saute until soft.
Add shrimp and cajun seasoning. Cook till done
Serve hot with grated cheese, parsley, chives etc.

Creamy Tahini Dressing


Ingredients
  • 1/4 cup drippy tahini
  • Juice from ½ large lemon (about 2-3 tablespoons fresh lemon juice)
  • 1 clove garlic, grated or finely minced
  • 1 teaspoon very finely diced capers
  • 2 teaspoons caper brine (from the jar of capers)
  • 1 teaspoon dijon mustard
  • 1-3 tablespoons warm water, to thin out dressing a bit
  • Freshly ground salt and black pepper, to taste.

Lemon Bars

 Shortbread with Lemon Topping!

Cream

1 cup butter

1/2 cup Powdered sugar

2 tbs Orange juice

Mix in:

2 cups flour

Press in to 9×12 pan

Bake 20 minutes @ 350

Cream:

4 eggs

1 cup Powdered sugar

1 cup sugar

Pinch salt

4 tbs flour

7- 10 tbs lemon and lime juice

Bake 20-25 minutes @ 350


Dust with powdered sugar while warm
