In trying to approximate some we can get commercially in town, the consensus is we surpassed them all! This is a riff off of a recipe from Kitchenaddiction. A mixer is a big help here as you are wanting to add air and really blend everything BEFORE the flour goes in.
The Stuff
First bitz
White sugar 2/3 cup
Brown sugar 1/3 cup
Butter 8 tbsp, softened
Second bitz
Egg 1
Black Pepper 1/2 tsp or more
Ground Cloves 1/2 tsp
Allspice 1/2 tsp or more
Cinnamon 1/2 tsp or more
Third bitz
Fresh Ginger, grated, 2-3 tbsp (about 2 inch piece, 3/4 inch diameter (thumb sized!))
Vanilla Extract 1 tsp
Molasses 1/2 cup
Fourth bitz
Flour 2 cups
Baking powder 1 1/2 tsp
Fifth bitz
Candied ginger, diced 1/2 Cup or more
White sugar in bowl
What do I do with all this?
Preheat oven to 375.
Put First Bitz in mixing bowl and mix at medium speed for 3 minutes. Add Second Bitz and mix for 2-3 minutes more. Add Third and mix 2-3 minutes more. Add Fourth and mix gently to blend, no more than 10 or 20 seconds. Scrape and gently fold in the Fifth bitz.
Form into loose balls and roll them in the sugar, then place them on the baking sheet. Cook for 10 minutes or until slightly brown at the edges. You want them chewy and soft. Should make about 2 dozen.
